Healthy Chickpea Salad [Vegan, GF]

This chickpea salad has been my absolute favourite lately. It is perfect on sandwiches, as a side dish, or just as a meal on it's own. The taste is amazing, and it kinda reminds me a bit of a tuna salad - just way better! This one's also a part of my Healthy Summer Food video, so check it out at the bottom of this post :)

1 can chickpeas
1/2 cup cherry tomatoes
1/4 cup red onion
1/3 cup pickles
1 tbsp tahini
1 tbsp mustard
1 tbsp fresh lemon juice

Finely chop tomatoes, onion and pickles. Drain and rinse the chickpeas and mash them in a bowl with a fork. add the chopped veggies together with the sauce ingredients and mix everything together. Eat right away, on a sandwich or leave in the fridge for up to a week.
