Pancakes for breakfast is one of my favourite weekend treats. I feel like I have got the recipe pretty much down by now, but when fall rolled around I had to change it up a bit. And what better way to do so then to add the iconic pumpkin to it? Pumpkin puree is not a very common ingredient here in Norway, but when I came across it the other day I knew I had to make some recipes with it. Do here's the first one, I hope you enjoy!



Ingredients
60g/0.5 cup oats
75g/0.5 cup gluten free flour/chickpea (gram) flour
1/4 cup pumpkin puree
1/2 tsp baking powder
1/2 tsp vanilla extract
1 tsp Cinnamon
1/2 cup almond milk
1/4 cup water

Method
Add all the ingredients to a blender and blend until smooth. Let it set for about 10 minutes while you heat the hob to medium-high heat. Cook with a little bit of coconut oil. 
I topped my pancakes with some coconut yogurt, maple syrup, chopped nuts and figs, but choose your own favourite toppings. This will serve one very hungry or two medium hungry people.

This is pretty much fall in a bowl. Warming and flavourful and the perfect start to your day. You can choose to use quinoa flakes, regular whole quinoa or even oats for this recipe. 



Ingredients
1/2 cup quinoa
1 cup liquid (I use half almond milk and half water)
1 tsp vanilla powder or extract
1 tbsp chia seeds (optional)

1 red apple
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp maple syrup
Water to cover the bottom of your pot

Method
Start by mixing together the porridge ingredients in a pot and put that on the hob on medium-high heat. The cooking process is pretty similar to cooking regular quinoa, so just follow the instruction on the package for cooking times. 
While the porridge is cooking, chop the apples into bite sized pieces and add those to another pot with cinnamon, nutmeg and maple syrup. Cover the bottom of the pot with water and add to the hob on medium-high heat. Keep an eye on both pots to make sure they don't burn, but other than that you can't really go wrong with the cooking of these. 
Once the porridge is done, add it to a bowl and top it with the apples (don't worry if there's a bit of liquid left in the pot, it'll mix nicely with the porridge). Eat it like that or top with some cacao nibs, goji berries and hemp seeds.

I'm not sure how it is other places, but here in Norway it is really common to eat slices of bread for breakfast. Here are some of my favourite flavour combinations, so I hope you enjoy them. These are of course really customisable though, so get creative and have fun with it.

This smoothie bowl is so delicious. The sea buckthorn berries gives it a slightly unusual, but absolutely amazing citrusy flavour, and the oats bulk it up a bit to make it more filling while the banana and mango makes it creamy and wonderful. Sea buckthorn berries have an absolutely amazing content of vitamin C + healthy omega fatty acids, but if you can't find it you could substitute it for orange instead. 


Ingredients
1 fresh banana
1/2 frozen banana
1/3 cup frozen mango
1/3 cup frozen sea buckthorn berries
1/4 cup oats
1-2 tbsp chia seeds
1 tsp cinnamon

Add all the ingredients to a blender, make sure to chop the frozen banana into chunks if frozen in big pieces. Add water until you reach your desired consistency. Start with a little bit as it can easily get too runny. Pour your smoothie into a bowl and top with your favourite toppings. I used granola, kiwi, strawberries, blueberries and coconut flakes, and I also ended up drizzling on some tahini at the end which was absolutely amazing!!

This granola is absolutely delicious! It is filled with flavour and will make your mornings that much better. You could even add cacao nibs or chocolate chips and make it a chunky monkey granola! Yes, please :) 




Ingredients
3 cups old fashioned oats (use gluten free oats if allergic)
1 cup peanuts
1 large ripe banana
1/3 cup natural creamy peanut butter
1/3 cup maple syrup
2 tablespoons coconut oil
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon sea salt


Mash the banana and combine all the ingredients in a bowl. Make sure the coconut oil is soft, or quickly melt it for easier distribution throughout your mixture. Once everything is combined, spread the granola evenly out on a lined baking tray. Bake in the oven at 160C or 320F for about 25-30 minutes. Stirr occasionally for even baking and keep an eye on it at the end so it doesn't burn (mine overcooked slightly). Once it's done, let it cool completely and store it in an airtight container at room temperature.

These granola fruit tarts were such a happy discovery! The base is absolutely delicious, and you can customise the toppings completely to your liking! They are also so healthy that you can have them for breakfast without any guilt. 


Ingredients
3/4 cup (2dl) oats
1/2 cup (1 dl) ground almonds
1/2 tbsp sesame seeds
2-3 tbsp coconut oil 
2 tbsp liquid sweetener (maple syrup, date syrup, honey etc)
1/2 tsp vanilla extract
1 tsp cinnamon 
Coconut yogurt + mixed fruit and berries for the toppings

Add all the ingredients (except yogurt, fruit and berries) to a bowl and mix together. Separate into four small tart pans (you can also use muffin liners and a muffin tin and make probably about 8-10 mini tarts). Press the mixture down into the pans and up along the edges. If you find the mix too sticky to spread out properly add some water to your fingers and continue the process. Bake the tart bade in the oven at 170C or 325F for about 25-30 minutes. Let them cool for a while. Then add a few tablespoons of coconut yogurt + your berries and you're good to go!

These pineapple bowls scream summer to me. Pineapple is one of my favourite fruits, and these mini ones were just too cute to pass on. You can definitely use regular pineapple instead though, just use one half or double the recipe. I have also added pitaya (dragonfruit) powder this smoothie. I had my first pitaya bowl at Farm Girl cafe in London last summer and absolutely loved it. + the colour it absolutely amazing! I used a pity powder from Just Blends which is great, but if you don’t have any and want to make this right now you can use freeze dried raspberries or any other fruit you would like as well. I showed how I make these in my recent healthy snacks video, so definitely check that out at the bottom of this video!




Ingredients
1 1/2 frozen banana
The inside of one mini pineapple (or 1/4 big one)
1 1/2 tsp pitaya powder
Coconut rice milk or water until you have the desired consistency. 


Half the pineapple and cut out the inside flesh to make pineapple bowls. Chop the frozen banana into pieces and then add all the ingredients to a blender and blend until smooth. Att liquid as you go as you don’t want it to be too runny. Top with your favourite toppings, I used some fresh dragon fruit, coconut flakes and passion fruit.

Pancakes were one of my favorite things when I was little, whenever we would have them I would always be so excited. Now here’s the thing though. In Norway we eat pancakes for dinner! They are big and thin and almost like a tortilla in size and shape. It wasn’t until I was 10 and went to the US that I experienced pancakes for breakfast for the first time. And they were so weird compared to what I was used to – small and thick and kinda strange tasting. Haha! Granted my first experience with breakfast pancakes was at Mc Donalds, so I don’t blame the strange taste on the fact that they were small and thick.


I have later realized that pancakes for breakfast is actually such a good idea. It is so easy to fill them with a lot of goodness to fuel you for the day and they are quite quick and easy to make too! I don’t recommend that you eat Mc Donalds pancakes every day as I’m positive they are not very good for you, but if you make them at home where you have control of what goes into them you could easily have them every day and not feel guilty at all!

These pancakes are, as you have probably noticed, green. Now don’t let that put you off. This only means that they are packed with even more amazing nutrients and benefits, but I PROMISE you that you will not be able to taste the difference! The green color comes from an added handful of spinach, which is such an amazing food! 30g of spinach has approximately 160% of the daily recommended intake of vitamin K, 120% of vitamin A, and also vitamin C, E and different B vitamins. It is also a good source of iron and magnesium and a bunch of other minerals as well. So why wouldn’t you add all of that into your breakfast if you won’t even be able to taste it? And if that’s not enough, these pancakes also have bananas which are a great source of potassium, magnesium and copper + vitamin C, B6 and other vitamins as well. They include oats which are a great source of protein, B-vitamins (especially B1), and minerals like copper, iron, magnesium, phosphorus, zink, potassium and calcium. They are gluten free (make sure to use certified gluten-free oats if you are intolerant) and vegan (dairy- and egg free), and they taste absolutely amazing! If you are still put off by the green color they will still taste amazing without the spinach, but I dare you to keep it in!
To take this recipe to the next level, I have added in a recipe for a healthy salted caramel sauce as well (WHAT?!). It is possible! It is made of only four ingredients, with no refined sugar and no cream or dairy of any kind. It is extremely creamy and indulgent and definitely tastes like it would be so bad for you. But it is not, promise!
Another bonus of this recipe is that it requires such few ingredients and the batter and sauce is made in probably less than a minute! So it’s perfect for those early mornings where you really don’t have time to cook a big breakfast (which is most mornings, let’s be honest). It is also perfect to make if you are having someone over for breakfast and want to impress them with you cooking skills. Try making them for someone who is really skeptical to healthy food and see what they think without telling them the ingredients! I’m sure they are going to love it! So without further ado, let’s get to it!

Pancakes
Ingredients (makes 10 pancakes)
1 cup of oats
1 cup of almond milk
1 ripe banana (the riper the sweeter)
1 handful of spinach
A dash of cinnamon
Method
Add everything to your blender and blend until smooth. Heat your cooking top to medium high heat and add your batter. Flip the pancakes when the batter starts bubbling and has gone matte. If it crumbles up and does not want to flip it is not ready yet so leave it to cook for a bit longer. It will flip around easily when it’s ready.
Salted Caramel Sauce
Ingredients
4 medjool dates
1/2 cup of water (use more or less depending on the consistency you want)
1 tsp vanilla extract
A pinch of sea salt or pink himalayan salt
Method
Blend all the ingredients in you blender. Add more water if you would like the consistency to be runnier.
That’s it! So easy, right? I like to stack the pancakes in a pile, add the caramel sauce on top and then top it all of with some fresh fruit and berries. This time I cut up some plums and added frozen raspberries, and it was so good. The freshness of the fruit goes really well with the sweetness of the caramel sauce.
